is there a way i can grab two non-adjacent channels from an 8 channel wav,
and export them as a stereo wav?

for example...
input 8ch_wav_input.wav (select channel 3,8)
output 2ch_wav_output.wav (using the input's ch 3 as left, ch 8 as right)
